Quick Cheats Nachos
Time: about 45 minOven: +-230°C – grill functionServings: plus minus 6-8Ingredients: Chili beef mince / 1 medium onion / 2 cloves of garlic crushed / 1kg beef mince / 2 tbsp. tomato paste / 2 tsp. smoked paprika / 1 cup of beef stock( good shop bought one will do) / 1 tin Mexican styled chopped tomatoes / 1 tin drained red kidney beans / salt and pepper to taste / handful of chopped coriander Finishing touches: / 1 large packet of your favorite Dorito’s / 250ml sour cream(shop bought tub works perfect) / 1 ½ cup grated cheddar . Side dishes / 2 avocado’s / 1 medium tomato / 2 tbsp. chopped coriander / ½ a lemon’s juice / salt and pepper / lettuce shredded / cherry tomatoes Method: / Fry the onions until soft, add garlic and fry for few seconds then add the mince / Fry the mince and onion mixture until dry, add the tomato paste and paprika and stir through, add the rest of your ingredients and reduce heat. / Cook for about 20 min until most of the liquid has evaporated, stir through the chopped coriander and switch off the heat / Empty the packet of Doritos into a deep oven dish about 25x25cm, top with the chili mince and spoon the sour cream over it then sprinkle with the grated cheddar. / Place under the grill until cheese is melted and serve warm with the sides SIDE DISHES: Mash the avocado’s with a fork and combine with the rest of the ingredients; except the lettuce and cherry tomatoes.
